Koukou Sibzamini is a sort of Iranian potato omelette quite similar to a Spanish tortilla, with onions and spices (saffron, turmeric, curry) to your tastes.

Preparation of the Koukou Sibzamini

Cook the potatoes in water and grate or mash them in a salad bowl.
Note: it is better to wait for the potatoes to cool before grating or mashing them. Your koukou will hold up better when cooked.

Fry the onions in a separate pan and finely chop the garlic.

Add the 2 eggs, cooked onions, minced garlic, yeast, turmeric, saffron (optional), salt and pepper to the grated or mashed potatoes. You can also add herbs like parsley or basil.
Mix everything well.

Heat some sunflower oil in a pan. Form small round croquettes with your hands, lower the heat and add the koukou to the pan.
For a good cooking, make sure that the Koukou is 3cm thick at most.

Fry the Koukou Sibzamini on one side then turn it over using a plate or a flat lid. Leave to cook over low heat for a few minutes.

Take your koukou out of the pan and wring it out using a paper towel to remove the fat.

Enjoy your Koukou Sibzamini hot, warm or cold with mast-o-khiar (Iranian tzatziki) and season it to your liking.
