Shepherd’s salad, also known as coban salad, choban, or Turkish salad, is a staple of Turkish cuisine. It is simply made with cucumbers, tomatoes, onions, parsley, olive oil, and lemon juice. It is undoubtedly the most popular side salad in Turkey!

Chop your ingredients

Wash your tomatoes and cucumbers and dice them into small cubes. Peel your onions and slice them thinly. Cut your green chili pepper into thin strips and dice your green bell pepper into small cubes. Finally, finely chop your bunch of flat-leaf parsley. Add everything to a large salad bowl.

Squeeze the juice of two lemons over your Turkish shepherd's salad, drizzle with olive oil, season generously with salt and pepper, and mix well.
