Künefe is a Turkish cheesecake made with Kadayif (angel hair) and cheese.
This Turkish dessert is not very healthy but it is so good!
Which Cheese for the Künefe recipe?
A fibrous, unsalted cheese made from a mixture of cow’s milk and sheep’s milk
Turks use a desalted cheese like Dil Peynir which is a fibrous, unsalted cheese made from a mixture of sheep’s milk and cow’s milk. If you don’t have Peynir, Mozzarella or Ricotta cheese will do very well.
Steps
1 Done 10min | Preparation of the syrupIn a saucepan, dilute the sugar in 12cl of water. Place the pan on the heat and mix well. Skim off the white foam that forms on top and add a tablespoon of lemon juice to the boil. Stir for another 3 minutes on the heat and set aside. |
2 Done 5min | Preparation of angel hairMelt the butter and set aside. Lent and cut the angel hair with scissors (in small pieces of 1 to 2 cm) in a large dish and mix them with the warm melted butter, taking care to work the dough evenly. Divide your Künefe dough into two equal portions. |
3 Done 20min | Dressing and cooking your homemade KünefeIn a medium-sized pan, spread the first half of the Künefe dough and cover with Peynir or shredded Mozzarella. If you like, you can add a few crushed pistachios on top. Add the second part of your buttered angel hair on top. Fry for about 10 minutes over medium heat until the dough browns. Using a plate or lid, turn the cheesecake over and bake for another 10 minutes on the other side. |
4 Done | Your Turkish Cheesecake is ready!And that's it, you've made a delicious Turkish Künefe at home! Sprinkle it with cold syrup, add some pistachio powder and serve it hot with some Kaymak (or Mascarpone). |
