Gözleme is a traditional Turkish recipe. You can find it at every street corner in Turkey! It is simply a kind of pancake filled with whatever you want! In this recipe, I present you my favorite Gözleme: the Gozleme with spinach and feta cheese.

You’re in for a treat!

Steps

Preparation of the Gözleme dough

In a bowl, pour the flour and salt. Add half the warm water and your teaspoon of olive oil. Knead your dough for about 15 minutes, adding the rest of the water as you go, until you get a soft and smooth gozleme dough. The dough should not be too sticky. Divide the dough into 6 to 8 pieces and cover them with plastic wrap and let them rest for about 20 minutes. Once the dough has rested, it should have almost doubled in size. Prepare the filling during this time.

Add the spinach sprouts

Add the 300g of spinach shoots to the pan and fry over medium heat for about 10 minutes. Add salt and pepper and paprika (optional).

Add the feta cheese

Turn off the heat and crumble 150g of feta cheese into your spinach, onion and garlic mixture. Set aside and let cool.

Garnish your Gözleme

After letting your dough pieces rest, flour your work surface and roll out a ball of dough into a round shape so that it is about 3 milimeters thick (the thinner the better). Place your filling on one half of the gozleme dough (leaving at least 1cm on the sides) then fold the other half over and seal it by pressing it down with your fingers. Repeat for all your dough pieces.

Cooking Gözleme with spinach and feta cheese

Brush your Gozleme with olive oil and heat a frying pan without adding fat. Cook one or two gozleme at a time. Cook on one side until small brown spots appear, then flip the pancake. Cover and cook for about 1 minute more.

And here is the work! Your homemade Turkish Gozleme are ready. Serve them hot or warm with a dash of lemon juice. Enjoy your meal!
