Preparation of the Gözleme dough

In a bowl, pour the flour and salt. Add half the warm water and your teaspoon of olive oil. Knead your dough for about 15 minutes, adding the rest of the water as you go, until you get a soft and smooth gozleme dough. The dough should not be too sticky. Divide the dough into 6 to 8 pieces and cover them with plastic wrap and let them rest for about 20 minutes. Once the dough has rested, it should have almost doubled in size. Prepare the filling during this time.

Preparation of the stuffing

Peel and chop your onions and garlic cloves. Heat a little olive oil in a frying pan and sauté the onion and garlic for about 5 minutes.

Add the spinach sprouts

Add the 300g of spinach shoots to the pan and fry over medium heat for about 10 minutes. Add salt and pepper and paprika (optional).

Add the feta cheese

Turn off the heat and crumble 150g of feta cheese into your spinach, onion and garlic mixture. Set aside and let cool.

Garnish your Gözleme

After letting your dough pieces rest, flour your work surface and roll out a ball of dough into a round shape so that it is about 3 milimeters thick (the thinner the better). Place your filling on one half of the gozleme dough (leaving at least 1cm on the sides) then fold the other half over and seal it by pressing it down with your fingers. Repeat for all your dough pieces.

Cooking Gözleme with spinach and feta cheese

Brush your Gozleme with olive oil and heat a frying pan without adding fat. Cook one or two gozleme at a time. Cook on one side until small brown spots appear, then flip the pancake. Cover and cook for about 1 minute more.
