A Shredded or Small Diced Roast Chicken
300g Finely chopped pickles
2 bunches chopped green onions
8 Large free-range eggs, cooked, scaled and diced
as you like Herbs: coriander, parsley or chives
150g Drained peas
4 teaspoons Mayonnaise
Juice of one lemon
6 teaspoons Greek yogurt If light version
2 teaspoon Olive oil

Olivieh Salad is very popular in Iran and other eastern countries like Turkey. This salad is greatly inspired by the famous Russian salad called Olivier salad.

Composition of Olivieh salad

This delicious salad is made with potatoes, peas, chicken, mayonnaise, hard-boiled eggs and cucumbers. You can flavor your potato salad with green onions, parsley or cilantro.

Light version of Olivieh salad

If you want to make a light version of Olivieh Salad, you can mix mayonnaise with Greek yogurt. This will make your potato salad lighter and more digestible.

Preparing the potatoes

Bring salted water to a boil in a large saucepan and cook the potatoes in it for about 12 minutes. (the cooking time depends on the size of the potatoes). Drain them and immerse them in cold water to stop the cooking. Once cold, peel them and cut them into 2.5cm cubes.

Assembly of Olivieh salad

Once your potatoes have been peeled and cut, put them in a large salad bowl, add the shredded chicken, finely chopped pickles, chopped green onions, diced hard-boiled eggs, peas and herbs. Mix everything by hand, being careful not to crush the ingredients of the Olivieh salad.

Preparation of the sauce for the Olivieh salad

In a bowl, mix the mayonnaise, lemon juice, olive oil then salt and pepper generously.
For the light version of the Olivieh salad: Add 6 tablespoons of Greek yogurt for 4 tablespoons of mayonnaise.

Pour the sauce into your large salad bowl and mix it with the Olivier salad with a large spoon. Taste your salad and add a little salt, pepper or lemon juice to your liking.
