Mucver is just a delicious dish that i’ve tried during my trip in Turkey! I’ve been trying to eat this in every restaurants I went since it’s absolutely delicious!
Mucver is simply zucchini fritters that are eaten usually with a bit of yoghurt on top.
Prepare your Mucver paste
Place your 3 grated Zucchinis in a colander over a bowl. Mix it with 2 pinches of salt and squeeze for a couple of minutes to drain all the excess juice of zucchinis. Dont squeeze for too long because we want to keep them just a little juicy!
Once your zucchinis are not too juicy anymore, grate the onions in it. Add the 4 eggs, flour, salt and black pepper, baking powder into the bowl and mix it well. Finally, add the nigella seeds and your dill. Avoid mixing too much to keep the mixture thick and batter like consistency. You can also add mahaleb seeds if you have some. To make your mucver taste even better you can also add some diced halloumi cheese.
Prepare for frying your zucchini fritters
Pour some oil into a large frying pan and start heating it. The oil should barely cover the mucvers while frying. Dip a wooden spoon to the oil, if bubbles come out, it means your oil is to hot enough to fry your Mucver.
Frying your homemade Mucvers
Dip two spoons into the oil and scoop a heaped tablespoon of batter for each mücver, slide the batter into the hot oil with the second spoon and press with the back of the spoon. Fry until golden brown. Flip and fry the other side. Transfer on a colander to drain excess oil.
How to make Mucver in the oven ?
To make the mücver in oven instead of frying, preheat the oven to 200 C (390 F) on upper and lower heat without fan. Grease a tray with olive oil and spread the mixture on it. Top with some halloumi or mozzarella. Place into the bottom of the oven and bake for 20 minutes. Then transfer to the middle shelf of the oven and bake for another 10 minutes. Guilty free, easier and delicious mücver is ready!
