Kadayif (or Kadaif) is the cousin of the Turkish Künefe. It is a delicious Turkish dessert made with angel hair (Kadayif), served with a sweet and lemony syrup. This recipe is ideal for the upcoming month of Ramadan!

Preparation of syrup

In a saucepan, dilute the sugar in 12cl of water. Put the saucepan on the fire at medium heat and mix well. Skim off the white foam that forms on the surface of the water. As soon as your syrup comes to a boil, add the lemon juice. Stir for another 3 minutes on the heat and set aside.

Preparation of angel hair (Kadayif)

First, melt the butter and set aside. In a large dish, separate the angel hair by cutting it by hand or with scissors. Try to cut them into small pieces of 1 to 2cm.
Add the melted butter to your Kadayif (angel hair) and mix well, making sure that all the angel hair is well soaked in butter.

Preparation of the Pistachio filling

Place your pistachios, and if you wish also your almonds and walnuts in the blender. Blend well until you obtain a powder that is neither too fine nor too coarse.

Dressing your homemade Kadayif

Preheat oven to 180°C. Divide your angel hair soaked in melted butter into two equal parts. With the first half, form a first layer on the bottom of the dish. Then add your pistachio and almond powder and add the rest of your angel hair for a second layer of Kadayif.

Cooking Kadayif

Bake your Kadaif for about 30 minutes at 180°C until it reaches a nice golden color.

Your homemade Kadayif is ready!

Pour the cold syrup over the still warm cake and let your Kadayif stand at room temperature for about 4 hours. Sprinkle it with pistachio powder for decoration and serve it with a Turkish tea at snack time. Enjoy!
