Loobia polo (or lubia polo) is one of my favourite persian dish and is very popular in Iran. It’s a perfect combination of rice, green beans and meat (usually lamb or beef). You can make it vegetarian or serve it as a Tahdig to impress your friends !
Loobia polo can be served with the refreshing and delicious Shirazi salad.
Loobia polo is traditionally made with stewed beef, veal or lamb. In fact, you can make it with other meats such as pork or chicken breast for example. This recipe mainly contains green beans, onions, tomato paste, turmeric, cinnamon, saffron, potatoes and rice.
Materials needed for Loobia polo recipe:
- A large pressure cooker
- A rice cooker
- If you are making the lubia polo Tahdig version: to be sure of your Tahdig’s success, prefer this cooker which has a cooking method for the Tahdig
When preparing the lubia polo, heat the green beans, onions and spices in olive oil. You can add potatoes cut into small cubes. In fact, you can pour a few teaspoons of lemon juice in it or add Oman’s dehydrated lemon powder to vary the taste. The basis of this Iranian dish is its saffron long grain basmati rice. This saffron preparation brings a special flavor to the recipe. To get the Tahdig side of loobia polo, simply mix the saffron rice with the green beans and meat. Then add thin slices of potatoes placed at the bottom of the pan or cooker. This step is crucial to adapt the lubia polo to the Tahdig version.
This traditional dish from Iran can also be concocted with various aromatic herbs, yogurt and clarified butter to suit your taste. As you have seen, lubia polo is a flavorful Iranian dish. One more reason for you to give it a try by concocting a delicious homemade loobia polo!
Steps
1 Done | Saute the meat or make and saute meatballs. Or you can skip this step if you're a veggie ! |
2 Done | Removie both ends of the green beans and chop all of them into 1 inch pieces. |
3 Done | Put some olive oil in a pan and add the green beans, onions, tomato paste and spices. |
4 Done | Let everything cook on medium heat in the pan for about 10 minutes, add tomato paste halfway. |
5 Done | Add boiling water, mix well, cover your pan and let it simmer for about 20 to 30 minutes. |
6 Done | RiceNow you need to make your rice. Boil some water and add your rice, prefer using basmati rice. |
7 Done | Saffron riceOnce your rice is cooked, if you have saffron, boil a little bit of water and add saffron. Mix and wait 5 minutes. |
8 Done | Tahdig loobia poloIn a large non-stick pot, add some vegetable oil. Take your saffron rice and your green beans and make layers in the pot starting and ending with rice. |
9 Done | Cooking your Loobia poloPour a little bit of boiling water on the sides and cover the pot. |
